One cup of cooked Brussels sprouts contains just 56 calories but is packed with nutrients.
They're a great source of vitamin C, vitamin K, folate, and fiber, and also contain smaller amounts of iron, calcium, and potassium.
But the real star of the show when it comes to Brussels sprouts is their high concentration of glucosinolates, which are compounds that have been shown to have powerful antioxidant and anti-inflammatory effects in the body
. In fact, studies have linked a diet high in cruciferous vegetables like Brussels sprouts with a reduced risk of several types of cancer.
But enough about the science - let's get to the fun part: cooking and eating!
Here are five of our favorite ways to prepare Brussels sprouts:

1. Roasted Brussels sprouts with balsamic glaze: Preheat your oven to 400 degrees Fahrenheit. Cut off the tough stems of your Brussels sprouts and slice them in half. Toss them with olive oil, salt, and pepper, and spread them out on a baking sheet. Roast in the oven for 20-25 minutes, until they're tender and lightly browned. While they're roasting, make a quick balsamic glaze by simmering balsamic vinegar, honey, and garlic in a small saucepan until it's thick and syrupy. Drizzle the glaze over the roasted Brussels sprouts and serve.
2. Shaved Brussels sprout salad with apples and bacon: Thinly slice your Brussels sprouts using a mandoline or sharp knife. Toss them with diced apples, crumbled bacon, and a simple vinaigrette made with olive oil, Dijon mustard, and apple cider vinegar. This salad is crunchy, sweet, and salty all at once.

3. Brussel sprouts and sweet potato hash: Heat some oil in a large skillet over medium heat. Add diced sweet potato and cook until it's just starting to soften, about 5 minutes. Add sliced Brussels sprouts and continue cooking until everything is tender and browned, about 10-15 more minutes. Season with salt, pepper, and a sprinkle of smoked paprika for extra flavor.
4. Creamy Brussels sprout gratin: This one is a little more indulgent, but still packed with nutrients. Slice your Brussels sprouts in half and blanch them in boiling water for 2-3 minutes, then drain. Make a simple cream sauce by melting butter in a saucepan, whisking in flour, and gradually adding milk until it thickens

Add grated Parmesan cheese and stir until it's melted and smooth. Layer the Brussels sprouts in a baking dish, pour the cream sauce over them, and sprinkle with breadcrumbs. Bake at 375 degrees Fahrenheit for 20-25 minutes, until the top is golden brown and bubbly.

5. Spicy Brussels sprouts and chickpeas: Drain and rinse a can of chickpeas and toss them with sliced Brussels sprouts, olive oil, smoked paprika, cumin, and a pinch of cayenne pepper. Roast in the oven at 400 degrees Fahrenheit for 20-25 minutes, until everything crispy and golden. Serve as a side dish or add some cooked quinoa or brown rice for a filling vegetarian meal.
