If there's one thing Italians know how to do right, it's bread. And when it comes to breadsticks, or grissini, as they're known in Italy, Nonna's recipe is second to none. These crispy, flavorful sticks are the perfect accompaniment to any meal or simply enjoyed on their own as a satisfying snack. Today, we're sharing the secrets straight from Nonna's Casa Cucina on how to make these delicious Sourdough Grissini. So, roll up your sleeves, and let's get baking!
Ingredients:
260 g all-purpose flour
120 ml filtered water
75 g sourdough starter (discard, 100% hydration)
30 ml extra virgin olive oil
1 tsp salt
1 tsp sugar
1 tbsp red pepper flakes or black pepper (or 1 tsp ground toasted fennel)
Or 2 tsp Za'atar for a non-spicy option

Instructions:
Prepare the Dough:
Weigh all ingredients using a food scale. Combine the seasoning with the flour for easier incorporation.
In a mixing bowl or the bowl of a stand mixer, combine the flour, water, sourdough starter, olive oil, salt, sugar, and chosen seasoning.
Let the mixer run until the dough is uniform and gluten has developed, about 5 minutes.

Rest and Shape the Dough:
Let the dough rest on the counter for about 20 minutes before shaping.
Spray your counter with pan spray and use a rolling pin to shape the dough into an 11 x 6-inch rectangle. First Rise:
Spray a baking sheet and place the shaped dough on it to rise, covered with plastic wrap or a suitable reusable cover. A flipped-over baking sheet works well.
Allow the dough to rise for approximately 3 hours until it becomes airy and risen. Cut and Shape the Grissini:
Once the dough has risen, use a pizza cutter to cut it into roughly 1/2 inch strips.
Place the strips onto a parchment-lined or pan-sprayed baking sheet.

Bake to Crispy Perfection:
Preheat your oven to 375°F (190°C).
Bake the grissini on the middle rack of the oven for approximately 20-25 minutes or until they turn golden and crispy. Enjoy Your Homemade Grissini:
Once baked, remove the grissini from the oven and allow them to cool slightly before serving.
Serve alongside your favorite Italian dishes, such as pasta, soup, or antipasto platters.
Enjoy them as a flavorful snack on-their-own or dipped in marinara sauce or olive oil with balsamic vinegar.
There you have it – the simple steps to creating authentic Italian Sourdough Grissini straight from Nonna's kitchen. Whether you're a seasoned baker or just starting out, these breadsticks are sure to impress with their crispy texture and irresistible flavor. So, why wait? Bring a taste of Italy into your home today with this delightful recipe. Buon appetito!
